          Well, when she first realized who she was seeing, she didn't expect Anakin & Obi-Wan to walk in, so she was focused on trying to kill Palpatine. Then, when they walked in, she had to give a good reason as to why she was attempting to assassinate the Chancellor. And she hasn't had time to develop a plan or strategy yet - she's just realizing that she's in the wrong time, and figures that there's no reason to keep the Chancellor's identity a secret. She just doesn't count on nobody believing her, even though she's telling the truth.

          If she didn't announce that he was a Sith, she would have to invent a reason to have been trying to kill him that could have made it seem like Ahsoka was an enemy to the Republic, which she doesn't want, or leave it up to speculation, which could be equally bad. Really, she ends up between a rock and a hard place due to circumstance.
